ID3
For MP3 files, iTunes writes tags in Unicode ID3v2.2 by default. You can convert them to ID3v2.3 and ID3v2.4 by setting the "Convert ID3 Tags" in Advanced options. However, iTunes tends to skip ID3v1.x tags if both ID3v2.x and ID3v1.x tags exist in a file.
